Bamboo Murabba Recipe (Sweet Bamboo Shoot Preserve)

Ingredients:

  • Fresh young bamboo shoots – 500g

  • Sugar – 400–500g (adjust to taste)

  • Water – 2 to 2.5 cups

  • Lemon juice – 1 tbsp

  • Green cardamom (powdered) – 1/2 tsp

  • Cinnamon stick – 1 small piece (optional)

  • Saffron strands – a few (optional)


🧑‍🍳 Instructions:

1. Preparing the Bamboo Shoots:

  • Peel the outer layers of the bamboo shoots.

  • Cut into thin slices or small pieces.

  • Soak in water for 24 hours, changing the water 2–3 times — this helps remove bitterness and toxins (like cyanogenic glycosides).

  • Boil the bamboo pieces in plenty of water for 20–30 minutes, then discard the water. Repeat boiling once more if bitterness remains.

2. Make Sugar Syrup:

  • In a pan, add sugar and water. Bring to a boil and cook until slightly thick (one-thread consistency).

  • Add cardamom, cinnamon, and saffron (if using).

3. Cook the Bamboo:

  • Add the pre-boiled bamboo shoots to the syrup.

  • Simmer for 15–20 minutes, or until the syrup thickens and the bamboo is well soaked and slightly translucent.

4. Finishing Touch:

  • Add lemon juice and stir. This helps balance the sweetness and preserve the murabba.

5. Cool & Store:

  • Let it cool completely.

  • Store in a sterilized glass jar. Keep refrigerated for longer shelf life — up to 2 months.
